Winemaking: The grapes are harvested by hand and sorted during picking. They are lightly pressed into a pneumatic press to achieve slow extraction.
Breeding: After a gentle settling, the wine is put in French oak barrels of 228 liters (20% new barrels) for alcoholic fermentation as well as for malolactic fermentation with natural yeasts for 16 months.
